Stuffed Acorn Squash

This pumpkin-y dish serves up all your favorite fall flavors in one comforting bite.

Ingredients:

  • 1 Acorn squash
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1/2 cup chopped spinach, kale, or chard
  • 3/4 cup cooked sausage crumbles (sage, Italian, vegan - you choose!)
  • 1 cup cooked wild rice
  • 1/2 cup plus 2 tbsp grated parmesan cheese, divided
  • Optional:  Mix in other seasonal ingredients such as diced apple, dried cranberries, or raisins for new flavors.  Add your favorite herbs and spices and make it your own!

Directions:

  • Cut squash in half from stem to tip. Scoop out the pulp and seeds.  Brush with olive oil and bake, cut sides up, at 400 degrees for 40 minutes
  • Saute onion in a little olive oil.  Add garlic and greens at the end and cook until just wilted. 
  • Combine onions, greens, sausage crumbles, wild rice, and 1/2 cup parmesan.
  • Fill cooked squash halves with stuffing.  Top each with 1 tbsp of grated parmesan.
  • Return to the oven for 10 minutes to melt the cheese.
