This pumpkin-y dish serves up all your favorite fall flavors in one comforting bite.
Ingredients:
- 1 Acorn squash
- 1/4 cup diced onion
- 1 clove garlic, minced
- 1/2 cup chopped spinach, kale, or chard
- 3/4 cup cooked sausage crumbles (sage, Italian, vegan - you choose!)
- 1 cup cooked wild rice
- 1/2 cup plus 2 tbsp grated parmesan cheese, divided
- Optional: Mix in other seasonal ingredients such as diced apple, dried cranberries, or raisins for new flavors. Add your favorite herbs and spices and make it your own!
Directions:
- Cut squash in half from stem to tip. Scoop out the pulp and seeds. Brush with olive oil and bake, cut sides up, at 400 degrees for 40 minutes
- Saute onion in a little olive oil. Add garlic and greens at the end and cook until just wilted.
- Combine onions, greens, sausage crumbles, wild rice, and 1/2 cup parmesan.
- Fill cooked squash halves with stuffing. Top each with 1 tbsp of grated parmesan.
- Return to the oven for 10 minutes to melt the cheese.
