Hearty Winter Vegetable & White Bean Soup

What You’ll Need:

  • ~2 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 1 can white beans, rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp thyme
  • 1 bay leaf


How to Make Them:

  1. Saute onion, carrots, and celery in olive oil until softened
  2. Add garlic, thyme, and bay leaf; stir until fragrant
  3. Add beans, tomatoes, and broth
  4. Simmer 30-40 minutes; stir in greens just before serving
  5. Salt and pepper to taste
  6. Optional: add kale or spinach for color & texture

Ladle into your favorite bowl, drizzle with olive oil, and enjoy. Best served with crusty French baguette; Pinot Noir; candlelight and good company.
