What You’ll Need:
- ~2 tbsp olive oil
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 1 can white beans, rinsed
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp thyme
- 1 bay leaf
How to Make Them:
- Saute onion, carrots, and celery in olive oil until softened
- Add garlic, thyme, and bay leaf; stir until fragrant
- Add beans, tomatoes, and broth
- Simmer 30-40 minutes; stir in greens just before serving
- Salt and pepper to taste
- Optional: add kale or spinach for color & texture
Ladle into your favorite bowl, drizzle with olive oil, and enjoy. Best served with crusty French baguette; Pinot Noir; candlelight and good company.
