Cheddar Herb Irish Soda Bread

This quick savory bread will bring the taste of Ireland to your St. Patrick's celebrations or give a delicious addition to any meal. The baking soda gives it a unique texture, and the buttermilk and cheese add a tangy flavor. 

Ingredients:

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 4 ounces sharp cheddar cheese, diced small (about ¼-inch) or shredded 
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 1 cup buttermilk
  • 1 large egg
  • 1 tablespoon melted butter
Directions:
  • Preheat oven to 425 degrees Fahrenheit.
  • Stir together flour, baking soda, baking powder, and salt in a medium-large bowl
  • Mix in cheese and chopped herbs, making sure to break up any clumps
  • In a smaller bowl, whisk the egg and buttermilk together until well combined
  • Add the buttermilk and egg mixture to the dry ingredients and stir until the flour is mixed in
  • Sprinkle a generous amount of flour onto a work surface and turn the dough onto the floured surface
  • The dough will be very sticky. Dust the surface of the dough with more flour if it is too sticky and shape into a round loaf
  • Transfer the loaf onto a parchment lined sheet pan
  • Cut a deep X through the center of the dough with a sharp knife
  • Bake for 20 minutes and check the center of the loaf for doneness, baking an additional 5 minutes if needed.
  • Brush the top of the loaf with melted butter, slice, and enjoy!
